Our intern called from New York, where he and his wife are enjoying a vacation. He was at Dean and Deluca and came across Mariages Freres teas. He couldn't find any Marco Polo tea, but they did have Marco Polo tea jam. I asked him to bring me 5 jars. Bless him.
Such a different experience than my brother's with his intern; from IM chat yesterday: "Oh my GOD! My intern just asked me who Balthazar G. is. We've only talked to him every single day for the last two years! She's been here a year and a half. She had a concussion then...I don't think she's recovered."
Now I just need to dump out the jars of iced tea in my fridge. If only I can figure out a way to break the seal: the inversion method really does work.
There has got to be a way to do this. What about following a recipe for mint jelly? I may have to test this out even though I have no clue what tea jam should taste like.

You know, I'm still really obsessed with this. I think I'll try your suggestion and see how it turns out. Tea jam just tastes like a sweetened version of the tea in spreadable form. It's really lovely and odd. I thought about making a gelee but it's not supposed to be tea jello. Although that gives me an idea... If you like, I can email you and send you a sample of the Marco Polo tea jam to try.
